French Onion Soup | Ep. 47 | Cooking in the Community Kitchen

Ingredients

  • 6 red onions

  • 3 tbsp olive oil

  • 1 tbsp butter

  • 1 tsp white sugar

  • 1 tsp salt

  • 1 tsp mince garlic

  • 1/2 cup beef broth

  • Cheesecloth

  • 2 bay leaves

  • 3 sprigs of fresh parsley

  • 3 sprigs of fresh thyme

  • Salt and Pepper, to taste

  • 5-6 pieces of bread

  • 1 tsp olive oil

  • 1/2 cup - 1 cup gruyere cheese

  • Sprinkle of parmesan

Preparation

Peel six large red onions, add to a large pot. Pour over 3 tbsp of olive oil and 1 tbsp of butter, stir. Sprinkle sugar on top of the onions and a teaspoon of salt. Add minced garlic and de-glaze with beef broth.

Create a sachet with the cheesecloth and add the bay leaves and thyme. Add to the large pot and season with salt and pepper.

Brush both sides of bread with olive oil and toast in the oven until slightly brown. Remove toasts and sprinkle with gruyere and parmesan. Put back in the oven until cheese melts. Ladle the soup into a bowl and top up with cheese toast.
