Mariam's Holiday Vegetable Kebabs | Ep. 43 | Cooking in the Community Kitchen

We all know that hosting is SO fun, and that it involves some extra planning for friends joining with allergies or food preferences. This recipe is for those who eat vegetarian and/or vegan! Mariam helps us create this very festive looking appetizer that will be delicious for those who aren't even vegetarian! Easy to assemble and looks great on your Holiday table. ENJOY!

Ingredients

  • 1 small carton of cherry tomatoes

  • 2 cups bocconcini cheese

  • 1 red pepper, chopped to size of cherry tomatoes

  • 15 basil leaves

  • 1 small package of whole white mushrooms

  • 1/4 cup olive oil

  • bamboo skewers

  • balsamic reduction sauce

Preparation

Assemble the vegetable kebabs by starting with a bamboo skewer. Add cherry tomatoes, then cheese, folded or whole basil leaf, mushroom cap and top with a piece of red pepper. Create all sewers in the same pattern. You can skip the cheese to make the kebab vegetarian/vegan. Drizzle the olive oil and balsamic reduction to serve. ENJOY!
