Vegetarian Rice Paper Rolls | Ep. 45 | Cooking in the Community Kitchen

Hosting a vegetarian? Perhaps trying to save money at the grocery store and skip the meat some meals. Try out these delicious and veggie-packed Vegetarian Rice Paper Rolls. The only time crunch is preparing all of the ingredients…and then you just roll everything together! ENJOY!

Ingredients

  • 6-8 rice paper rolls

  • 4 large romaine lettuce leaves

  • 1 cup bean sprouts

  • 1/2 bell pepper cut into slices (red or yellow)

  • 2 medium carrots cut into small sticks

  • 1/2 cup red cabbage shredded thin

  • 1 cup edamame beans, shelled and cooked

  • optional - garnish with fresh cilantro or mint

Preparation

In their packaging, the sheets of rice paper are very fragile and brittle.  Once soaked in medium hot water, they become soft and pliable so you can wrap them around your favourite fillings creating your personalized rice paper rolls.

To roll the wraps: fold in the right and left  sides first. Then take the bottom end of the wrap, fold it over the ingredients in the center, and continue to roll it up all the way.  If you like, you can cut the roll in half or leave them as is.  Don't get discouraged if the first few times your rolls aren't picture perfect.  They will taste super delicious. Serve Fresh with your favorite dipping sauce. These naturally vegan and gluten free rolls as an appie or lunch. ENOY!
