Watermelon, Cucumber and Cherry Salad | Ep. 34 | Cooking in the Community Kitchen

With the end of summer, the watermelons are perfectly ripe - and won't be as sweet until next summer! This perfectly bright salad is both sweet and savoury and is perfect for a picnic or BBQ to celebrate the changing seasons. ENJOY!

Ingredients

Watermelon, Cucumber and Cherry Salad

  • 6 cups of cubed watermelon

  • 1 cup of pitted cherries, halved

  • 1/4 cup chopped mint

  • 1/4 chopped red onion

  • 1/2 English cucumber, diced

  • 1/2 cup crumbled feta cheese

Dressing

  • 2 tbsp lemon juice

  • 3 tbsp canola oil

  • 1 tbsp honey

  • salt and pepper

Preparation

Watermelon, Cucumber and Cherry Salad

In a large bowl, combine watermelon, cherries, mint, red onion, cucumbers and feta.

In a small bowl, combine lemon juice, canola oil, honey and salt and pepper. Whisk well.

Dress salad right before serving. Travels well for picnics or back to school lunches. Enjoy!
