Mint, Mango and Avocado Salad I Ep. 53 I Cooking in the Community Kitchen

Ingredients
SALAD:
- 1 Green onion- finely chopped 
- 1 Mango - chopped 
- 1 Ripe avocado - chopped 
- 1 Red bell pepper - chopped 
- 6 cups Mixed salad greens 
- 2 Tbsp. Fresh mint - chopped 
- Optional: 1/2 cup of Toasted almonds 
- 2 Tbsp. freshly shredded Asiago cheese - DRESSING: 
- 1 clove Garlic - minced 
- 1/4 cup Granulated sugar 
- 1/4 cup Vegetable oil 
- 1/4 cup Cider or white vinegar 
- 2 Tbsp. Fresh Mint - chopped 
Preparation
Dressing: Mix all ingredients together in a small bowl , use a whisk to ensure the sugar dissolves. If there is extra dressing, store in the fridge.
Salad: In a large salad bowl, combine salad greens, green onion, mint, chopped mango, avocado, and red pepper. Add enough dressing to coat the ingredients. Toss.
Optional: Top with toasted nuts and shredded cheese.
